What are you doing during quarantine? We are cooking and enjoying good homemade meals everyday. Well, mostly Dave cooks... 😉 Here is a recipe I found that I wanted to demonstrate for you. I hope you enjoy it. I have eaten this many times now as I’ve been practicing! I’ve used up the frozen strawberries given to me by a friend at Christmas to top these delicate crepes off...so things are slowly getting cleaned up out of the freezer and cupboards, and I’m happy for that. How To Make A Caramel Nut Apple Pie. 1. Start with a ROOM TEMP OR COOL Dutch Apple pie, don’t use a warm pie. 2. Place pie on scale and set back to zero. 3. Melt Caramel in a double boiler to 120 Degree F. Do not let caramel get too hot. 4. We use whole roast jumbo cashews, pecan halves and roasted salted peanuts…Not broken bits and pieces. 5. Make sure the nuts are distributed evenly over entire pie surface (peanuts have a tendency to settle at the bottom on the jar, so remix often) 6. Scatter 0.40lbs of mixed nuts on top of pie nice and evenly reaching all the way out to the edges. (Do not pile nuts in the center) 7. Notice the fluidity and color of our all natural caramel? We use no chemical preservatives in any of our ingredients . 8. Holding pie in one hand close to the pot of caramel so as not to drip caramel over the sides of the pot and work surface (stay neat and clean as you work!) 9. Drizzle 0.45lbs of caramel in thin ribbons over the entire pie gluing down the nuts! Be sure to get as close to the edge as possible without dripping over. 10.
